Easter Ham!

My first real holiday gathering, and I think my meal went over
very well!
I decided to make a ham (actually, we got a couple of smaller black forest hams), roast potatoes, salad and corn.
It was yummy! And Ione (Collin's Mom) brought over fresh buns and dessert: Apple Crisp and ice cream! It was a perfect meal!

Dinner Guests

Last night Collin and I had his Mom and sister over for dinner. It was nice... but what would have been nicer is if Collin didn't have to drive to pick them up AND drop them off at home after(it's an hour round trip, from our new house to their house!) Someone in that family needs to get a drivers liscence! I'm seriously so over driving them around! (At least we don't do that very often!)
It was the first time Collin's Mom has seen our new place, so she was pretty open with the compliments! I know she wishes she could have a nice big house like we have (she's currently in a 4-plex, which is very cramped, and was only supposed to be a temporary thing)
...that's a whole other can of worms, that I could get into, but won't! I'm just happy that Collin isn't totally like his Dad. (He's not my favorite person in the world, that's for sure!)

What's for dinner tonight?

Thai Chicken and Rice, that's what!
I made a trip to Safeway looking for some dinner inspiration and decided I wanted to make something Thai flavored! I managed to find a couple of packages that required minimal preparation and ingredients!

It was really flavorful! The chicken sause was a bit spicy, and I had to use extra water to keep it from becoming too thick. I wouldn't recommend these two together (the chicken sause and the Ginger coconut rice) because they both had a very intense flavor that didn't mingle well. My suggestion would be to make the General Tso's saucy chicken with a plain Basmati or Jasmine rice. Keep it simple.
However the rice was really tasty, so it could be used as a side dish for a more bland chicken dish. Check my Flickr pictures for the packages of ingredients I used.)
